The Fleur du Cap Sauvignon Blanc is brilliantly clear with green edges and shows aromas of fig leaves, classic gooseberries, asparagus and delicate tropical fruit. It’s paired with seasoned butter popcorn, dusted with Kala Namak Salt, an Indian mineral salt with a pinkish-grey colour.
This full-bodied Chardonnay is smooth, rich and layered, finishing off with subtle mineral linearity. This wine is paired with green olive tapenade which brings forward the woody characters reminiscent in this superb wine, whilst the olive oil compliments on the smooth rich butterscotch taste that lingers in the back, making you crave for more.
The Merlot has a deep ruby colour with a bright hue. On the nose, it shows multiple layers of dark fruit such as plum and blackcurrant with a hint of oak spice. Perfectly paired with carpaccio of beef, blushed tomato, horseradish crème and micro herbs. This dish is accompanied by Khoisan Salt from South Africa’s West Coast, a fine grain sea salt of the purest quality.
This complex Cabernet Sauvignon has a dark deep colour and concentrated aromas of Christmas cake, blueberry and violets with hints of cassis. The strong flavours present in the duck rillette brings forward the subtle nuances of lead pencil shavings and complex oak notes of the wine. The dish is paired with Oryx Desert Salt, South Africa’s own natural white crystal salt.
The lovely balance between sweet and fresh acidity of this Noble Late Harvest stands up well to a fairly sweet dessert. The fruity notes of the wine dominated by peach and dried fruit coupled with the silky mouthfeel are well weighted for the fudge.
